Fish Tacos with a Creamy Avocado Sauce



Happy Tuesday Morning!!!!

This past weekend was so simple yet so much fun! The weekends where we cook at home, sip wine, and make memories as a family are really my preference over going out and about in a busy crowd. We stayed in on Friday ( it was GORGEOUS!) opened all the windows, played some music, and mama made some fabulous fish tacos! I even invited our friends over and they loved them! I make fish tacos a lot and have used about every fish under the sun to find the perfect fit for my taco. I will be honest.. salmon tacos are gross :) 

When you do go about picking a fish for a taco it needs to be sturdy, mild in flavor ( so you can spice it up with all your toppings), and always wild caught. Some of my favorite fishes for the tacos are halibut, snapper, speckled trout, and Sol. In this particular taco I used the Sol and it paired perfectly with the avocado lime ranch sauce I made to go on top!!! 

here ya go!


Ingredients:

2 8 oz filets of your fish of choice

purple cabbage

1 bunch of cilantro separated and chopped

1 or 2 fairly medium avocado chunked

2 cloves of garlic-minced

1/2 large yellow onion chopped

juice of 1 lime

1 jalepeno pepper seeded and chopped

sour cream

1 ranch seasoning packet

corn tortillas ( street taco size)

Procedure:

Start by sautéing your onion and garlic in some butter and a little bit of EVOO ..take care NOT to burn your garlic. Cook until the onion is softened. Salt and pepper your fish and spray with Lemon Juice. THIS is the best way to get that wonderful juice of a lemon without using a stale spice. Transfer fish to the pan and sear both sides then turn the heat down and add a little bit of white wine to deglaze the pan. keep putting the sauce over the fish. Once the fish is cooked remove pan from heat! 

For the Sauce:

( a food processor or a mini food processor would be helpful for the sauce or any blending tool of sorts)

add some of the chopped cilantro - saving some to top the tacos- and add it to the processor
next add your jalepeno, 1/4 sour cream, 1/2 ranch seasoning packet, juice of a lime, and 1/2 of the chunked avocado season with salt and pepper to taste. Pulse until you get a nice creamy sauce...taste and add the seasonings as needed. I found that I liked my sauce a little more salty and with more sour cream so I added until I was satisfied with the flavoring. 


** Have toppings ready in cute little ramekins** 

This makes for a cute presentation and its fun to grab and top! I used 

chopped avocado, cilantro, mini lime wedges, purple cabbage, and I did have cheese if anyone wanted it.


pop those tortillas in the warmer and then serve up some tacos!!!

Seven Month Update



Month Seven.

Seven months of being a mommy has flown by.. I would say that during the first three time stood still. I was so tired and it just seemed like he was in that little newborn stage forever! Now every time I turn around he is mastering a new skill, attempting to crawl, copying my coughs, trying to pull up on things, and constantly making my heart burst into a million pieces. 

Lately I have been struggling with the thought of " Am I enough" - sure I am a GREAT mom and wife.. I truly know this! However someone said to me " Don't you want more than to JUST be a mom?" That really bothered me because honestly no. I don't. At first it made me feel insecure..like maybe my mommy goal doesn't measure up to the status of going and grabbing my masters degree or climbing up that corporate ladder. That comment marinated with me for about a week.. and so I did what I always do. I started to pray. The more I prayed the more I found God speaking to my heart that I am not JUST a wife and mom. I am a wife who supports and prays for her husband diligently and daily. I support his career, keep a VERY clean house, and attend work dinners, meetings, and events with him because I love him. I am a wife who creates parties and hosts dinners all the time because it is in my heart to give and to watch others have a good time! I am a wife who makes my husband proud because I truly gave it my everything to have our son. 

I am a mom. 

I am a mom who wakes up and rocks her baby at all hours because his teeth hurt. I am a mom who gets on the floors and plays with my boy because it truly makes my heart joyful to hear him giggle when I steal his favorite caterpillar and hide it behind my back. I am a mom who takes a MILLION videos and pictures because I waited 20 months to do so and it makes me so happy that I can finally post my beautiful precious boy. I am a mom who actually for the most part has her shit together...and I am proud of that. I love Jesus, my husband and our baby boy.. and I cannot wait to be a mom to more of my babies!!! God called me to be a wife and mom.. but I am not JUST a wife and mom..I am so much more! I know not everyone can say that and I truly know that I am wonderful at both.. maybe not all the time but I was meant to do this and so I own it. I love it. I am blessed with it.

Sweet baby Jax, 

When God gave me you he brought a part of me to life that I never even knew was dead. You have given me more Joy than I can even explain... spending my days at home with you are amongst my most favorite ways to spend time. I love the simple things.. drinking my coffee and watching your face light up when you figure out a new toy. Your giggle melts my insides and makes me want to burst in a million pieces!!!! You will always be my first baby.. my most prayed for child and I am so so so grateful every single day that God chose me to be your mommy. Being a mom is a more cherished title than any corporate job could ever hold. I am so looking forward to our new home being built and watching you and your siblings play outside. This is the best part of life <3

A Day in the Life...


A day in the life... 

I always read these posts on other blogs and even though everyones lives are typically SO boring.. there is just something about taking a peek into other peoples daily routine that is interesting :) LOL #flyonthewall

here is our typical Monday..

*disclaimer; we aren't all that interesting lol! 








First- I wake up to THIS face :) 7:30 AM






 Here I am at 8:00 AM in workout clothes and ready to eat some breakfast. 

( It is to much of a whirlwind in the AM to capture every moment so just use your imagination :) Jaxie wakes up..he gets a morning bottle, breakfast, I drink my first cup of coffee, I change him, we play on the floor, and then 8 AM comes and I get dressed for workout. Back downstairs to play..clean up kitchen, empty dishwasher, feed the pets and out the door by 9 for Stroller Strides. Yipee!


On my way out the door I grab my little Go-To energizer drink.. It is just a crystal light with a little caffeine. I love it! This is the Strawberry Kiwi one.


Here we are super pumped at Stroller Strides!! :) 


We came home from stroller Strides where we both had lunch.. Jax a bottle and me a hamburger patty with half of an avocado..



12:00 I cleaned up from lunch then filled my big Yeti with some lemon water ( I am trying to drink water ALL DAY LONG) and we played on the floor

Once we played for a while we went upstairs and I rocked Jaxie to sleep -12:30 and he napped.

While he napped I did my quiet time. I am currently doing a new bible study that I LOVE!!! It is Priscilla Shirer's Armor of God. If anyone is interested you can click to buy HERE



I did my little quiet time for an hour then came down stairs and had my afternoon cup of coffee. I try and limit my caffeine. Actually thats A lie..I don't. LOL I have two sometimes THREE cups of coffee a day and it helps me survive. #Sorrynotsorry

Baby is still napping so mama got to read a Pottery Barn Magazine and enjoy a Latte


maybe 10 minutes into my nice little reading sesh he woke up. So we snuggled :)






I forgot to document BUT earlier this day I went to Hobby Lobby and grabbed a bunch of supplies I needed for a project I am working on. I am calling it #ProjectHandprint and its going to be SO cute!!! This was our first go round.







3-5 PM I did a bad time of documenting.. Brandon and I just hangout on the floor with the baby and I forgot to take pictures ( trust me it wasn't THAT exciting haha) we went for a short family walk and then came home and I started prepping dinner. While I prepped Brandon helped me finish the craft project and then fed the baby. YAY

This is quinoa cooked in chicken broth with sautéed zucchini, onion, and some avocado

6:30 He is eyeing mommy and daddy's Dinner 




Our dinner tonight...roasted broccoli, quinoa, and salmon patty.

After the kitchen was picked up I got out my ingredients to make my no bake energy balls.


7:30

I went upstairs and read and rocked my Jaxie and put him to sleep then came back downstairs and started these bad boy

After I made my energy bites I ran upstairs for a BATH. This is my mommy time.. I relax in a Eucalyptus bath while wearing some of my favorite masks HERE..and browsing through pinterest. Its  MY THANG!


Then I applied my seriously long face regimen. I will blog about  my face routine another time. 



8:30 

Came downstairs to make my cup of tea and empty the dishwasher...also I grabbed a bite of my little energy bites.


How interesting am I???


Checked on our project and then hiked it up to bed :)


it is now 9 PM and I am currently in bed blogging this post. I plan to watch a show with Brandy and then go to sleep!!!!
