FISH A LA MEXICANA



Shrimp/Fish A La Mexicana


This supper is a simple staple in the Keeshan household. My dad loves to take different salsas, and try cooking them with different meats. This turned out to be a hit! My dad is the main reason I love cooking. I love to sit in the kitchen while he tells me in detail the reasons " Why you brown meat before cooking", and which spices to use on which dishes. I have learned a lot from him and will continue to do so in all of my cooking endeavors. This dish is simple because it requires only a few ingredients AND you can swap out the meats for a different spin. I used Halibut for ours but I have also used shrimp, tilapia, and chicken...all tasty!!! My favorite is shrimp and halibut though... :)

Shopping List

two eight oz filets of fish of choice or 1 1/2 lb shrimp deveined
four garlic gloves diced and minced
1/2 cup of dry white wine
1/2 cup butter ( eye ball if you want more)
olive oil
One jar of CHUNKY salsa- we use our Ranch Foreman Felix's salsa that he makes specifically for our family...maybe one day they will be brave enough to brand it and sell it and then we all can have some!!!! :)
** chunky means that it is not a soupy salsa...the veggies are clear and present!!! If you cannot find a jar of salsa like this then I would make my own-recipe below. 
1/2 medium yellow onion chopped and diced
one box instant white rice ( optional is brown)


Procedure

Over medium high heat cook your garlic and onion in some butter and a little olive oil. Stir until nice and fragrant and onions are almost clear. Add your wine and deglaze the pan ( cook down)
Salt and pepper your shrimp/fish or use whatever seasoning you prefer and cook each side for two minute a piece. Once fish is browned, turn the heat down low and add the chunky salsa and simmer for 4 minutes.
Once shrimp is cooked and flaky immediately serve over white rice.
I served ours with some yummy asparagus!!! It was great!!!!!

Mexican Lasagna



Yes you read that right..


I know you may be freaking out that it sounds complicated...dont.
I made this dish in the midst of contractors sketching out plans for our floors, I made this dish for over 6+ people, I made this dish 32423423 times and Brandon still begs for it, Mexican Lasagna is legit. Oh and the soapapilla cheesecake is like 3 ingredients!!! 

* The one amazing thing about gooseberry patch recipes ( if you do not own one of their cook books I highly suggest you go and get one!!!!) Is that they are extremely easy to mix and match. Not a beef lover? Easy, just switch out the meat for cooked shredded chicken, switch up the sauce to an enchilada verde sauce with a can of hatch green chillies and you have a totally new spin on this!!!! Love it!!!!


Mexican Lasagna
Shopping List:

20 regular corn tortillas
cream of celery soup
cream of mushroom soup
one can of enchilada sauce
four green onions chopped
one lb all natural ground beef
one lb ground pork sausage ( regular)
One jalepeno' seeded and diced 
two bags of mixed Monterrey Jack/Cheddar cheese
one can of rotel
1/3 chopped yellow onion 
garlic powder
cumin 
salt/pepper
one tomato seeded and diced
chopped cilantro
sliced avocado for garnish

Procedure:

Start by browning your meat, once browned and crumbly drain and add rotel, Jalepeno', all the spices listed ( just eyeball I usually use a t per each spice.)
While that is marrying together whisk together over a medium sauce pan your two soups and enchilada sauce. Stir until heated and no clumps are present. Take a 9 *13 baking dish and spray lightly with baking grease and add spoon 1/3 of the sauce on the bottom of the pan, topping with six corn tortillas. On top of the tortillas add 1/2 of the meat mixtures, more sauce, and then finally top with cheese. Repeat one more layer until meat is used up. Top the final meat with the rest of the cheese, sliced tomato, chopped cilantro,  and green onions and bake at 350 for 30 minutes. 
YALL. JUST. WAIT :)

Colty Colt





....so true...

out of all my yummy food posts and my random posts..I realized I haven't done a post on my most favorite thing at my house!!! My big fur baby Colt.


We got Colt when he was 6 weeks old on a random spur of the moment " we are going to get a dog now " trip. We had been discussing getting a dog for OVER a year.. and finally one day as we were driving back from our beach house Brandon looked at me and said " I want to take you to buy a dog. Look up Breeders." I freaked out. I immediately got on google and started googling the closest breeders to San Antonio. I found a few legit breeders and called them but they were all wanting over 1,000 dollars for a lab pup..my budget was 650:( finally as I was about to give up I found a breeder in sequin who had a litter of 8 puppies..black and yellow and they were ready to go that day!!!! They were 500 dollars and we were the first ones to pick!!! I will never forget looking down at my feet once we arrived at this house and seeing the cutest most innocent looking black puppy. It was as if he chose us...I picked him up and never put him down. That is how we got Colt. He is a character this dog of ours, he chases his brother Calvin ( kitty prince), and hops into bed with us even though he is a gazillion pounds. He loves chasing butterflies but will follow and protect his mommy anytime she is sad, worried, or upset-he has an incredible instinct. He is amazing with kids which is good for us :) and he is always ready to play...this puppy has brought Brandon and I so much joy. I never even knew i was a dog person until I got him :) He is my special fur baby and I love him so much!!!!

WIWW Winter Style

I LOVE WINTER.


Winter is a time for plaid, a time to rock the scarves ( even when your husband thinks you wear scarves way to much), bust out the leopard gloves, and don't forget the UGG boots!!! :) Since I teach pre school my winter style has to be comfortable and reasonable ... but that doesn't mean I have to look like a frump on a log!!!! 


Staples in my winter closet include 

  • A good Pair of boots - weather they are leather, suede, or UGG material. ..make sure they are weather resistant, durable, and comfortable to walk in. My recent personal fave are my turquoise Wellies! I wear them all the time!!!! They are not only comfy but weather and rain resistant. 
  • A warm vest- I literally LIVE in my puffer vest. It keeps me warm and looking stylish:) I also love my FAUX<---- read that PETA) fur vest.. it is a very cute winter staple and can be used to dress a simple outfit up. 
  • A pair of flannel PJ's. I bought the Cutest pair at Marshalls...they are not only for sleeping in but also for those lazy Sundays after church where you wanna throw off your cute clothes and put back on your jammies. These types of pajamas are for those days :) 
  • Lots of layering pieces...long sleeved t-shirts from Gap or Loft are easy to pair underneath sweaters..I like to buy some with a pop of color so that if I choose to wear a dull sweater some FUN sticks out from underneath!!!!
  • Scarf...scarf...scarf. If you know me you should know I have a serious scarf obsession. It is so bad that my entire guest room closet is only filled with scarves :/ I probably shouldn't even admit that. I am the emelda marcos of scarves. Flannel ones have been my go to this winter. I am sure you have scoured pinterest and the shops and have noticed all the cute flannel blanket scarves!! They match everything! I love them!
